The Cod and Cabbage Marriage

When cabbage comes to mind, most think of a plain, flavorless vegetable. Truth is, with a little bit of imagination and the right ingredients it can turn into the talk of the party! This Cod and the rainbow cabbage go very well together because of the contrast of flavors, although they have very similar ingredients.


RAINBOW COD
Ingredients:

Wild-caught Cod fish
Tomato sauce (hyperlink to sauce)
Bay leaves
Sweet basil
Cumin
Rainbow peppers
Onions
Parley
Chives
Extra virgen coconut oil
Mrs. Dash Lemon-Pepper seasoning
Pink salt and Pepper


Sautéed the onions and peppers on coconut oil. Then add the Cod and the rest of the ingredients and let it simmer.  Pretty simple recipe to do and delicious.



 























RAINBOW CABBAGE
Ingredients:
Onions
Rainbow Peppers
Cabbage
Tomato sauce (hyperlink to sauce)
Pink salt and pepper
Turmeric
Sage
Thyme
Mrs dash garlic and herb














Sautéed onions with rainbow peppers, salt and pepper on extra virgen coconut oil on medium-high for 3-5 minutes.
Then add cabbage and tomato sauce. Sprinkle a bit of Mrs. Dash seasoning, a bit of turmeric, a dash f sage and thyme.











Cover it and let it simmer for 30 minutes. It will be ready as soon as the liquid starts to dry out and the onions caramelize with the peppers!










When done, I put it inside a bell pepper and bake it for a few minutes until the bell pepper loosen up and served it with the Rainbow Cod and Avocado!
