The "Everything" Tomato Sauce


This sauce doesn't get its name because it has a lot of ingredients; in  fact, there are only a few. It receives its name because it can be used with a variety of dishes. It is a great addition to omelets, salad toppings, or dressings, pasta (brown rice, cauliflower, zucchini), cauliflower crust pizza, as a dipping sauce or simply added to meats when cooking. Loaded with Lycopene and antioxidants this sauce this sauce makes a great addition to any meal. 

It is a good idea to make this sauce in big batches so it can be used in other recipes. This recipe makes around 1 gallon of sauce. Store the sauce in mason jars.  

Ingredients:
25 chopped medium tomatoes
2 chopped onions
6 chopped garlic cloves
Fresh Oregano
Extra virgen Coconut oil
Pink salt and pepper
Turmeric
Cumin
 

Sauté the onions with the coconut oil, add the spices and half the oregano that you are going to use. When onions are somewhat transparent, add the garlic and wait until garlic starts to smell (do not over cook it). Once you smell the garlic then add the tomatoes, add the salt and pepper and stir. Let it cook for hour an a half or so (until the oil rises to the top and do not touch it until then) and then add the rest of the oregano.

Instead of oregano you can use sweet basil, bay leaves or celery. Fresh oregano is preferred because of its health benefits and intense flavor.
